Thanksgiving Egg Rolls

2 cups canola oil for frying, or as needed
1 ½ cups cubed cooked turkey
½ cup turkey gravy
1 12oz package egg roll wrappers
1 ½ cups mashed cooked potatoes
1 ½ cups prepared stuffing
½ cup prepared whole-berry cranberry sauce

Heat oil in a large pan on the stovetop until it reaches 375°F.
Stir turkey and gravy together in a large bowl until well combined.
Lay an egg roll wrapper on a clean work surface with one corner pointing up (so it forms a diamond shape). Spoon 2 tablespoons mashed potatoes, 2 tablespoons turkey mixture, 2 tablespoons stuffing, and ½ tablespoon cranberry sauce in a vertical line in the center of the wrapper.
Dip your fingertips in a small bowl of water and moisten the edges of the wrapper. Fold the top and bottom corners over the filling, then fold in one side and roll tightly to seal. Repeat with remaining wrappers and filling.
Fry egg rolls in batches in hot oil, turning often, until golden brown and heated through, 3 to 4 minutes. Transfer to a paper towel-lined plate to drain and cool.

Green Bean Casserole

Campbell's original recipe makes 6 servings, but with a family of 8 we make 1.5 the recipe. French's recipe is slightly different and doesn't use soy sauce but is still very good. Adjust to your family size as needed.

16 oz can cream of mushroom soup
1 cup milk
1½ tsp soy sauce
¼ tsp black pepper
2 cups French fried onions
6 cups/50oz can green beans, drained

Mix soup, milk, and soy sauce, then add pepper, beans and 2/3 cup onions in 2 quart casserole dish.
Bake at 350° for 35-45 minutes or until hot and bubbly. Stir and top with remaining onions. Bake 5 more minutes.
