Fazoli's Breadsticks

 Our family loves Fazoli's breadsticks more than Olive Garden's. Yes, I said it. OG breadsticks always seem dried out, a bit overcooked and hard. But Fazoli's....I can't wait to try this recipe! The recipe only makes 16 so make adjustments as needed. It's very likely we will use garlic salt.

1 package Active Dry Yeast
4 1/4 cups all-purpose Flour plus more for dusting
2 tablespoons Unsalted Butter softened
2 tablespoons Sugar
1 tablespoon fine Salt
1 cup melted Butter or Margarine
1/4 teaspoon Kosher Salt
3 tablespoons Coarse Salt as needed

Place 1/4 cup warm water in a small bowl or cup.
Sprinkle in yeast. Set aside until foamy, about 5 minutes.
Pour yeast water into the bowl of a mixer.
Add flour, butter, sugar, fine salt and 1 1/4 cups plus 2 tablespoons warm water.
Mix with the paddle attachment until a slightly sticky dough forms, about 5 minutes.
Remove dough from mixer and place on a floured surface.
Knead dough by hand until very smooth and soft, about 3 minutes. Do not over knead.
Roll dough into a 2-foot-long log. Cut into sixteen 1 1/2-inch long pieces.
Knead each piece slightly and shape into a 7-inch long breadstick.
Arrange breadstick on a parchment-lined baking sheet, about 2 inches apart.
Cover with a cloth and let rise in a warm spot until almost doubled, about 45 minutes.
Preheat oven to 350°F.
Brush breadsticks with about 1/2 of melted butter or margaine.
Sprinkle with Kosher salt.
Place in preheated oven and bake until lightly golden, about 15 minutes.
Remove from oven.
Brush breadsticks with remaining butter or margarine.
Sprinkle with coarse salt.
