Senator Russell's Sweet Potato Casserole

(A Recipe From the Deep South-Georgia)

3 cups mashed sweet potatoes (3 large sweet potatoes, boiled & peeled or baked)
1 cup sugar
2 eggs
1 tablespoon vanilla
½ cup butter, melted (the real stuff)
Mix all of the above ingredients thoroughly. Pour into a buttered 1-quart casserole.

Topping:
1 cup brown sugar, packed
½ cup flour
1 cup chopped pecans
1/3 butter softened or melted
Mix the above ingredients together with a fork. Sprinkle the crumbs on top of the casserole.
Bake at 350° for 30 minutes. Yield: 8 servings (a whole lot for a family of 4!)
