4 cups all purpose flour
2 cups whole wheat flour (or any proportion of these two that you like - as long as the total is 6 cups)
2/3 cup white sugar
2 tbsp baking powder
1 tbsp baking soda
Mix together and store in an airtight container.
To make pancakes, take 1c. mix and add 1 egg and up to ¾ cup milk (I add however much I need to make the batter the thickness I want) and a dash of vanilla. Voila!
We have pancakes every Sunday night, so we've had lots of variations of pancakes. Here are a few.... (when adding fruit I usually have to decrease the milk)
add mashed bananas or mashed bananas and some chocolate chips
add peanut butter (¾ cup) and top with jelly instead of syrup
add diced peaches and cinnamon
add a can of pumpkin and pumpkin pie spices
add peeled, chopped apples and apple pie spices
