Apple Muffins w/Crumble Topping

I love love love the MGCC blog and once again they posted a recipe that just makes me want to go and make it right now.

2 eggs
1½ cups milk
1/3 cup vegetable oil
1½ cups coarsely grated apple
2¼ cups all-purpose flour
2 teaspoons cinnamon
3/4 cup sugar
3 teaspoons baking powder
3/4 teaspoon salt

Beat eggs then stir in milk, oil and grated apples.
Mix in remaining ingredients, just until flour is moistened.  Do not over-mix.
Fill parchment muffin cups 2/3 full.
Bake at 375° for 20 minutes...or until golden.
Remove from pan and cool on rack.
Yield...12 muffins
*Optional Crunch Topping...Sprinkle muffins with a mixture of ¼ cup brown sugar, ¼ cup chopped nuts and ½ teaspoon cinnamon.
