Tostados and Baked Apples

Today (on Saturdays) is Jani's turn to cook. Jani has been watching cooking shows since she came home from China. I think her favorite place to be is in the kitchen. She is choosing her own dishes to cook however we are directing her to simpler dishes. So today she made roasted anaheim queso fundido. We all learned something...just because a recipe has the word queso in it does NOT mean it's a queso! Yuck. We are not listing that recipe.

Tostados
shells
refried beans, warmed
tomatoes, diced small
Mexican cheese, shredded
lettuce (we cheated and bought the already shredded package)
guacamole (Wholly Guacamole)
sour cream
salsa

For dessert she chose something out of Disney's Cooking With Friends cookbook that we picked up at Half Price Books. I don't think we'll be big fan's of the book, but the kids enjoy looking at it.

Abu's Baked Apples
2 large apples
¼ cup apple juice or apple cider
¼ cup maple syrup
½ tsp ground cinnamon
Of course we tweaked it because I simply could not imagine why we would pour apple juice into an apple. Doesn't that seem weird?
6 apples
¼ cup maple syrup
½ cup brown sugar
¼ cup butter
vanilla
whipped cream

Mix it together, pour into almost completely cored out apples, put in stoneware, bake at 350° for at least 30 minutes. Apples get soft, we had 3 big apples, they needed to cook longer. These were still a bit tart but it was a good dessert.
