Pineapple Casserole

Found in Pioneer Woman magazine Spring 2026
 
4 tbsp salted butter, melted
2 20oz cans pineapple tidbits
2/3 c sugar
1/4 c ap flour
2 c grated sharp cheddar cheese (8oz)
1 1/2 c coarsely crushed butter crackers (Ritz, 1 sleeve)
 
Preheat the oven to 350°. Butter a 9" square baking dish.
Drain the pineapple tidbits, reserving 1/4 c of the pineapple juice in a large bowl. Add the sugar and flour to the bowl and whisk to combine. Fold in the drained pineapple and cheddar. Transfer to the prepared baking dish. 
Sprinkle the casserole evenly with the cracker crumbs and drizzle melted butter over the top. Bake until golden and bubbly, 30-35 minutes. Let it sit 10-15 minutes before serving.
 
Ree says this is a potluch classic. It's amazing how delicous pineapple tastes with cheddar cheese.
