Caramel Corn

24 cups popcorn, popped (12 tbsp=3/4cup unpopped)
1 cup butter (2 sticks)
2¼ cups brown sugar
¾ cup corn syrup
1½ tsp vanilla
¾ tsp baking soda
Extra butter for baking pan

Pop popcorn. Remove all unpopped kernels. Place popcorn in a large bowl.
Preheat oven to 300°.
Melt butter in pot on the stove top. Add brown sugar and corn syrup.
Stir until the mixture comes to a boil.
Once the mixture is boiling stop stirring and let boil for 5 minutes.
After 5 minutes remove from heat and mix in vanilla and baking soda. Pour mixture over popped popcorn. Thoroughly mix candy mixture and popcorn until popcorn is coated.
Butter a baking pan (I prefer using stoneware for this) and pour popcorn into the pan.
Bake in the oven for 10 minutes.
Remove, stir, and bake for another 5 minutes.
Remove and leave on pan to cool. Break apart and put in an airtight container.
